Bitter greens with walnuts and Gorgonzola dressing

Ingredients
- For the dressing:
- 2 T red wine vinegar
- Sea salt and freshly ground black pepper, to taste
- 6 T olive oil
- ½ t honey
- 50 g Gorgonzola
- For the salad:
- 2–3 chicory heads
- 30 g rocket
- 40 g roasted walnuts
Cooking Instructions
To make the dressing, mix all the ingredients until combined.
To make the salad, rinse the chicory, then cut off the base and separate into spears. Arrange on a small platter or large plates. Add the rocket and walnuts. Serve the dressing on the side.
