Ingredients

  • 1 x 800 g snoek
  • 40 g dried apricots, chopped
  • 2 T butter
  • 3 T honey
  • 2 lemons, juiced
  • 1 garlic clove, finely chopped

Cooking Instructions

Braai snoek over medium coals for approximately 10 minutes.

Bring dried apricots, butter, honey, the juice of the lemons, garlic clove and 4 T water to a simmer. Cook until caramelised and use to baste the snoek for the last 5 minutes of cooking time.

Cook's note: No public holiday in South Africa is ever going to sail by without a braai, and that braai is going to include a snoek done on the coals with apricot jam – or a family recipe involving apricots, spices (top secret) and maybe even a dash of chutney.
