Breakfast Muffins: Broccoli & Mature Cheddar Cheese Muffins
Ingredients
- 1½ cups Woolworths Cake Wheat Flour
- 2 t Woolworths Baking Powder
- ¼ t t Woolworths Bicarbonate of Soda
- ½ t Woolworths Sea Salt
- ½ t Woolworths Black Pepper
- 2 t Woolworths Ancient Grains Herbs & Spices
- 1 cup Woolworths Fresh Full Cream Milk
- ¼ cup Woolworths Mediterranean Olive Oil
- 1 large Woolworths Free Range Eggs
- ½ cup (Chopped) Woolworths Fresh Broccoli
- ½cup (Grated) Woolworths Mature Cheddar Cheese
- 1 large (chopped) Brown Onion
Cooking Instructions
Sieve all the dry ingredients, including salt and herbs & spices.
Mix the dry ingredients thoroughly. Add the chopped broccoli, onions and cheese to the dry ingredients and stir in until well incorporated.
Make a well in the centre of the dry ingredients and pour in the milk .
(Cooks Note: Milk should ideally be at room temperature.)
Add the egg into the milk and whisk roughly.
Now add the olive oil into the egg and milk mixture and start gently folding in the dry ingredients from around the bowl to form a slightly thick muffin batter consistency.
Evenly spoon batter into a12 cup medium-sized muffin pan and bake in a pre-heated oven at 200 degrees celsius for approximately 25 minutes until fully cooked.
Yields 12 medium-sized muffins.
Serve: A nutritious breakfast alternative. Delicious with poached or scrambled eggs.
