- 4 brown mushroom steaks
- 1 T olive oil
- 1 clove garlic, finely chopped
- 1 baby gem lettuce
- 1 tomato, sliced
- 4 slices medium fat halloumi cheese for burgers
- 2 T basil pesto
- 2 T caramelized onions
- Salt and pepper, to season
Heat a griddle pan over high heat.
Rub brown mushroom steaks with a little olive oil and garlic. Fry the mushrooms top side down until griddle marks form. Flip and repeat. Finish off in a preheated oven if you want them “well done”.
Heat a non stick pan over medium to high heat, and fry halloumi until golden on each side.
Assemble your burger layer by layer with the lettuce, sliced tomatoes, halloumi, basil pesto, caramalized onions. Season to taste.
