Method
• Place chopped butternut in a pot with chopped onion & celery.
• Cover with stock and leave to cook until soft. Add stock / water if necessary.
• Once cooked blend until smooth
• Add coconut milk & choice flavorings cook for 10min on high.
• Serve with drizzled coconut milk or full cream yoghurt & fresh coriander.

Substitute butternut for 3 sweet potatoes
