This easy 5-ingredient pea salad makes a debut every Christmas in our family, but it’s so simple and refreshing it should definitely be in your everyday salad repertoire.

Ingredients

  • 1 red onion, diced
  • 1 lemon
  • 1 x 410 g can Woolworths medium garden peas
  • 2 T vegan mayonnaise
  • Sea salt and freshly ground black pepper, to taste
  • shredded mint, for serving

Bonus points for adding a fifth ingredient: fresh mint totally takes it to the next level. Also, if you like, you can make it completely vegan by using Woolies vegan mayo! INGREDIENTS 1 red onion, diced 1 lemon 1 x 410 g can Woolworths medium garden peas or 270 g cooked petit-pois peas 2 T @Woolworths SA vegan mayonnaise Sea salt and freshly ground black pepper, to taste shredded mint, for serving 1 Place the onion in a salad bowl and squeeze over the lemon juice. 2 Drain peas and add to the bowl with the mayonnaise. 3 Mix until everything is coated in the mayonnaise. 4 Serve with a generous grinding of black pepper, a pinch of salt and garnish with mint. #peas #salad #easyrecipes #foodtok #southafrica #vegan ♬ Summer - Steve Ralph

1. Place the onion in a salad bowl and squeeze over the lemon juice.

2. Drain peas and add to the bowl with the mayonnaise.
