Cape gooseberry and chilli margarita

  • 2 T coriander, finely chopped
  • ½ cup sea salt
  • 4 shots agave syrup
  • 2 Serrano chillies, halved
  • 1 cup cape gooseberries
  • 2 limes
  • 4 tequila shots
  • 4 lime juice shots

Mix the coriander and salt. Dip 4 cocktail glasses into a little agave syrup, and then into the coriander salt. Place a halved chilli into each glass, then and fill the glasses with crushed ice.

Muddle the gooseberries with the lime, transfer to a cocktail shaker, then add the tequila, remaining agave syrup and lime juice. Shake with a few ice cubes and strain into the glasses.
