Ingredients

  • 1⁄2 cup extra virgin olive oil
  • 2 large brinjals, chopped into large cubes
  • 3 cloves garlic, minced
  • 3 tomatoes, quartered
  • 12 capers
  • 50 g sultanas
  • 12 green olives, pitted
  • 2 T Italian parsley, roughly chopped
  • 12 basil leaves
  • 1⁄4 cup red wine vinegar
  • sea salt and freshly ground black pepper, to taste

Cooking Instructions

Heat a little oil and cook the brinjal in batches and until soft and golden. Add the garlic and tomatoes and cook for 3 minutes. Add the remaining ingredients and toss.
