- 250 ml sunflower oil
- 4 free-range eggs
- 250 ml buttermilk or plain yoghurt
- 100 g sugar
- 560 g self-raising wheat flour
- 1 t salt
- 200 g Cheddar cheese, grated

Heat the oven to 180ºC.
Beat the oil, eggs, buttermilk or yoghurt and sugar* together.
Using a wooden spoon fold in the flour, salt and cheese. Do not overmix.
Spoon into well greased muffin trays and bake for 20 minutes or until golden brown.
*Cook's note: omit the sugar if you prefer a completely savoury taste. It won't affect the recipe.
Makes a very good and tasty snack/breakfast!
