Chilli and soya roasted short ribs with apple slaw

Ingredients

Method
  • 1 cup soya sauce
  • 2 cloves crushed garlic
  • 2 chillies, chopped
  • 8 beef short ribs
  • 2 T olive oil
  • Chilli-soya sauce
  • Red apple
  • Red onion
  • 3 T rice vinegar
  • Chilli, chopped
  • Crushed garlic
  • Ginger

Preheat the oven to 180°C.
In a saucepan over a medium heat, reduce soya sauce with cloves crushed garlic and chopped chillies.
In another pan over a high heat, sear beef short ribs in olive oil until browned on each side. Remove and transfer to an ovenproof dish, along with the chilli-soya sauce, turning to coat.
Roast for 15 to 20 minutes.
Serve with strips of red apple and red onion tossed with rice vinegar, chopped chilli, crushed garlic and chopped ginger.
