Choc-mocha mousse

Ingredients

Method
  • 1 cup cream
  • 150 g chocolate, chopped 
  • 2 T coffee
  • finely grated chocolate, for serving
  • For the Chantilly cream:
  • ½ cup cream
  • 1 t caster sugar
  • 1 t vanilla paste

1. Heat the cream in a saucepan until just boiling.

2. Pour the warm cream over the chopped chocolate. Allow to stand until melted, then add the coffee and whisk to combine. Allow to cool slightly, then beat with an electric mixer. Divide the mixture between 2 glasses and chill until set.

3. To make the Chantilly cream, beat the cream with the caster sugar and vanilla paste and spoon onto the mousse.

4. Dust with the chocolate to serve.

We used Smeg's retro-styled filter coffee machine and new coffee grinder to make the coffee for this recipe.
