- 1 kg pork spareribs, cut in half
- For the sauce, mix:
- 1 cup dry apple cider
- 2 T honey
- 2 T lemon juice
- 2 large garlic cloves, grated
- Sea salt and freshly ground black pepper, to taste
- For the apple slaw:
- 1 green apple, thinly sliced
- 1 celery, thinly sliced
- 2 - 3 salad onions, thinly sliced
- 1 baby cabbage, thinly sliced
- For the dressing, mix:
- 1⁄3 cup buttermilk
- 2 T thick mayonnaise
- Lemon juice, a squeeze
- Sea salt and freshly ground black pepper, to taste

1. Preheat the oven to 180°C. Place the ribs in a roasting pan, coated with cooking spray, in a single layer. Pour over the sauce.
2. Bake for 1 1⁄2 hours, basting occasionally, and turning once or twice, until very tender, bronzed and shiny.
3. Serve with the apple slaw and dressing.
