  • 3 ClemenGold® mandarins, juiced and zested
  • 9 ClemenGold® mandarins, halved
  • 1 cup Jersey double thick cream
  • 1 cup whipping cream
  • ½ cup sugar
  • pinch of salt
  • 4 T lemon juice

Cooking Instructions

1. Zest and juice 3 ClemenGold® mandarins and set aside.

2. Halve 9 ClemenGold® mandarins and gently hollow them out the citrus segments with a spoon.

3. In a saucepan add double cream, whipping cream, sugar, ClemenGold® zest and a pinch of salt. Bring to the boil for 5 seconds and then remove from heat. Allow to stand for 2 minutes.

4. Stir ½  cup of ClemenGold® mandarin juice and lemon juice into the cream until well combined.

5. Pour ⅓ cup of the posset mixture into the hollowed-out ClemenGold® mandarins and set in the fridge for 4 hours or until set.
