- 2 cups olive oil
- 1 chilli, halved
- A few fresh bay leaves
- 2 cloves sliced garlic
- 1 x 350 g salmon fillet
Preheat the oven to 180°C.
In a saucepan, gently heat olive oil over a medium to low heat. Just as it starts to bubble (it must not boil), remove from the heat and add chilli, halved, a few fresh bay leaves and cloves sliced garlic.
Carefully lower salmon fillet into the oil, then bake for 3–5 minutes.
Using a slotted spoon, remove the salmon from the oil and serve with sheets of warm pasta.
