Crisp sweet pepper salad with salty feta dressing

Ingredients

Method
  • 4 slim sweet salad peppers, sliced lengthways
  • 1 large or 2 small cos lettuce
  • 6 small crisp cucumbers, sliced lengthways
  • For the dressing, blend together until smooth and creamy:
  • 1 disc feta, about 75g, crumbled
  • 1/3 cup Greek yoghurt
  • 3 tablespoons olive oil
  • 1 clove garlic, crushed
  • 1/2 teaspoon dried oregano
  • Milled black pepper

Arrange the pepper slices, cos leaves and cucumber strips on plates or a platter. Pass around the dressing to spoon over each serving.
