- 300 g Grana Padano or Parmiggiano Reggiano (imported Italian Parmesan)
- 2 free-range eggs
- Salt and pepper to taste
- 100 g breadcrumbs
Heat oil in deep fryer.
Cut the Parmesan cheese in cubes (about 25g).
Beat eggs with salt, pepper and nutmeg.
Dip Parmesan cubes in beaten eggs. Roll cheese cubes in breadcrumbs. Repeat and deepfry crumbed cubes until golden.
Place on brown paper once fried and serve hot.
