- 270 grams English cucumber, grated coarsely, keep skin on
- 1/4 cup Coconut flour, sifted
- 1/4 cup Milk
- 4 large Eggs
- Salt, to taste
- Pepper, to taste
- 1 tsp Baking soda
- Oil, for frying
Mix the eggs, baking soda, cucumber, coconut flour, salt, pepper and milk together. Let it stand for 10 minutes.
On stove, heat pan with oil. Spoon mixture into flapjack sizes and put lid on. Cook for few minutes on each side .. bottom should be light brown and flapjack easily flipped.
Serve with yogurt dollops / cheese.
