Date, ginger and cinnamon muffins

Ingredients
- 1 cup self-rising flour
- 220 grams dried dates, cut up into small pieces
- 1/2 cup boiling water
- 1 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 1/4 cup sunflower oil
- 2 teaspoons ginger powder
- 2 teaspoons cinnamon powder
Cooking Instructions
Preheat oven to 190 oC. Prepare 12 muffin pan.
In food processor, blend the dates with boiling water till a puree. In bowl, beat together the egg, milk, date puree and oil. Add the self rising flour, ginger and cinnamon powder and salt. Spoon into 12 muffin pan. Bake for 20 minutes.
