  • 1 cup rice, cooked, cooled, not boiled with salt
  • 1 eggs large
  • 1/4 cup milk
  • 1 cup dried fruit - mixed, finely cut
  • 1 tsp cinnamon, ground powder
  • 1/4 cup sugar - brown / sweetener
  • 2 tsp lemon zest

Cooking Instructions

Preheat oven to 200 oC. Beat the egg and milk with fork. Mix it with the cooled down rice and all the other ingredients. Sprinkle lemon zest over.
Spoon into a greased muffin pan and press firmly down. It filled my 6 giant-muffin pan. Bake for 15 minutes. Let it cool in pan for about 10 minutes. Its not very sweet, so enjoy with yoghurt/ice cream/custard.
