Ingredients

  • 4 duck breasts
  • 1 t cumin powder
  • ¼ cup maple syrup
  • 1 t cinnamon powder
  • 1 T black sesame seeds
  • 1 t thick soy sauce
  • 1 t smoked sweet paprika lime halves, to serve

Cooking Instructions

Preheat the oven to 200ºC.
Using a sharp knife, score the fat of the duck breasts. Be careful not to cut through the meat.

Mix together the remaining ingredients. Pour over the duck fat.

Heat a cast-iron pan until very hot. Place the breasts skin side down and sear for 1 minute. Turn and sear for another 30 seconds. Place on a baking tray. Roast for 8 minutes. Remove.

Allow to rest for 3 minutes then slice into 3.
Serve with a squeeze of lime juice.

TASTE’s take:
The right shade of pink requires just a quick touch of the pan and a few minutes in the oven.
