Ingredients

Method
  • 3 free-range eggs
  • ¾ cup milk
  • 90 g flour
  • 1 t vanilla extract
  • ¼ t salt
  • ½ t ground cinnamon
  • 4 T butter
  • 1 T brown sugar
  • 2 Woolworths Ripe & Ready juicy pears, peeled, cored and sliced into 8 wedges
  • crème fraîche, for serving
  1. Preheat the oven to 220°C. Whisk the eggs, milk, flour, vanilla, salt and cinnamon. Set aside.
  2. Melt the butter and sugar in a 23 cm ovenproof frying pan over a medium to high heat. Add the pears and fry until soft and golden brown.
  3. Pour the pancake batter into the hot pan and place into the oven. Bake for 10–15 minutes, or until the pancake is puffed and golden brown. Serve with crème fraîche.
