Easy chocolate fudge with apple snow

Ingredients

Method
  • For the chocolate fudge
  • 125 g good-quality dark chocolate
  • 60 g butter
  • 65 ml Ideal Milk
  • 1 orange, zested
  • 375 g icing sugar
  • cocoa powder, for dusting
  • For the apple snow
  • 12 Granny Smith apples, peeled
  • 2 limes, zested
  • 3/4 cup water
  • 10 free-range egg whites
  • pinch of salt
  • 250 g caster sugar

To make the chocolate fudge, melt the chocolate and butter together in a glass bowl over a saucepan of simmering water, making sure the bowl doesn’t touch the water.

Once the chocolate has melted, remove from the heat and fold in the Ideal Milk and orange zest. Sift and beat the icing sugar into the mixture until smooth.

Spoon into an oiled and lined loaf tin, level the mixture and set aside to set.

When set, turn out and cut into squares (if you struggle to remove the fudge from the tin, slice in the tin).

Dust with cocoa powder and serve with dollops of apple snow.

To make the apple snow, place the apples, lime zest and water in a saucepan and cook over a medium to low heat for 15 to 20 minutes, or until the mixture resembles a purée.

Beat the egg whites with the caster sugar and pinch of salt until stiff and fold into the purée.

Chill for 2 hours before using.
