- 1 T olive oil
- 1 T butter
- 300 g exotic mushrooms
- 2 cloves garlic, finely chopped
- 2 sprigs thyme
- 4 eggs
Preheat oven to 200°C.
Heat the olive oil and butter in a non-stick cast iron pan over medium to high heat, and fry the exotic mushrooms until golden.
Add garlic and thyme, and continue cooking for a minute.
Whisk the eggs in a bowl, season with salt and pepper to taste, and pour into the pan of golden mushrooms.
Place the pan into the preheated oven for 10 – 15 minutes, or until set and golden.
