Don’t let working on a Saturday rid you of your weekend spirit. Make up a mini picnic with these waffle-pressed sweetcorn falafels

Ingredients

  • 200 g chickpeas, soaked overnight
  • 3 cloves garlic
  • 1 T ground coriander
  • 1 T ground cumin
  • 1 T smoked paprika
  • 1 T smoked chilli flakes
  • 10 g fresh coriander
  • 2 T Woolworths tahini
  • 1 cob sweetcorn, grilled and kernels removed from the cob
  • 1 lemon
  • hummus, for serving
  • tzatziki, for serving
  • fresh vegetables, for serving

Cooking Instructions

1. Blend all the ingredients until crumbly in texture. Shape into small patties.

2. Heat a waffle iron and grease lightly. Place 2 T mixture in the centre of the waffle iron and grill for 5 minutes or until light golden brown and crispy.

3. Serve with hummus, tzatziki and fresh veggies.
