Fine french beans with Moroccan spiced dates and mandarin

  • 200 g fine French beans
  • 2 T honey
  • 2 T Moroccan paste
  • 8 dates, pitted and sliced
  • 3 mandarins, thinly sliced

Boil the beans in salted water until soft but crisp. In a small saucepan, heat the honey and Moroccan paste.
Add the sliced date and bring to a boil.
Remove from heat, add the sliced mandarin and allow to heat through.
Strain the cooked beans and top with the orange and date mix.
Cook's note: Chermoula is a favourite Moroccan spice paste, available from delis.
