Fresh lemon and clementine soda sherbets

Ingredients

  • 12 clementines
  • Icing sugar, for dusting
  • Crushed ice, for serving
  • 1 litre soda water, chilled

Preheat the oven to 180°C.
Slice 4 of the clementines very thinly and arrange on a baking tray.
Dust liberally with icing sugar and bake for 20 minutes, or until crystallised.
Remove from the oven and allow to cool.
Meanwhile, squeeze the juice from the remaining clementines and the lemons into a jug and add crushed ice and chilled soda water.
Pile the crystallised clementine slices into glasses and pour over the icy citrus soda.
Serve immediately.

TASTE’s take:
If you prefer a slightly sweeter variation, use fresh pineapple juice in place of lemon juice. You can also use sparkling wine instead of soda.
