Gnocchi with creamy cheese-and-parsley sauce and peas

Ingredients

  • 50 g butter
  • 80 g flour
  • 2 1⁄2 cups milk
  • 1 t Dijon mustard
  • 40 g hard cheese, grated
  • 30 g parsley
  • 2 x 500 g bags Woolworths gnocchi, cooked

To make the sauce, melt butter in a saucepan. Stir in flour until smooth. Pour in the milk and whisk until thick. Add Dijon mustard, hard cheese and season to taste.

Remove from the heat and allow to cool slightly.

Blanch parsley in salted boiling water for 10–15 seconds. Refresh in iced water and squeeze to remove excess moisture. Blend to form a paste. Add a little milk to loosen the mixture if necessary.

Mix the herb paste and white sauce until fully incorporated. Toss 2 bags cooked Woolworths gnocchi into the sauce, top with blanched peas and a sprinkling of grated hard cheese.
