Preheat the oven to 200°C.
Combine the dry ingredients for the focaccia and add the water, bringing the dough together by stirring with your fingers in a circular motion, or using a fork.
Knead the dough on a clean, lightly floured surface for 10 minutes until soft and elastic, adding a little more water if necessary. Place in an oiled bowl, cover and place in a warm place to rise for 45 minutes or until doubled in size.
Divide the dough into four pieces and roll out. Brush with olive oil, dot with garlic and bake for 10 minutes. Remove from oven and top with the cherry tomatoes, frikkadels and Gorgonzola. Bake for a further 5 minutes and serve hot topped with the wild rocket.
