- 8 lamb chops
- 1½ cups ready-made tomato sauce
- 450 g baby spinach
- 200 g halloumi cheese, sliced
- sea salt and freshly ground black pepper, to season
Preheat the grill.
Place the chops in a baking dish and toss in the tomato sauce. Grill for 6 minutes or until cooked to your liking.
Toss in the spinach. Place the cheese on top. Season and add a squeeze of lemon juice.
Cook’s tip: If you like, make this a one-pot dish. Pour the tomato sauce into a casserole dish and top with the spinach, cheese and lamb chops. Bake until the lamb is cooked.
