Ingredients

  • 400 g hake fillets
  • Sea salt and freshly ground black pepper, to taste
  • Flour, for dusting
  • Olive oil, for frying
  • Butter, for frying
  • 400 g mixed mushrooms
  • 25 g Woolworths garlic butter
  • 2 T chives, snipped
  • Baguette, for serving (optional)

Cooking Instructions

Preheat the oven to 180°C.

Slice the fish into 2 or 3 pieces, season and lightly dust with flour. Lightly brown the fish in the oil and butter. Remove from the pan and drain on kitchen paper.

Place each portion of fish on a sheet of baking paper. Pour any remaining oil and butter from the pan. Wipe out and add a fresh spoonful or two of butter. Quickly sear the mushrooms and season to taste.

Spoon the mushrooms onto the fish. Dot with garlic butter and sprinkle with chives. Wrap up, transfer to the oven and cook for 10 minutes. Unwrap at the table. Serve with the baguette.
