- 2 small cos lettuces or large baby gem lettuces
- 1 pear
- 1 T olive oil
- 1 T brown sugar
- 125 g thinly sliced ham
- Bread rolls, for serving
- For the dressing:
- 25 g blue cheese
- 1 T red wine vinegar
- 3 T olive oil
- Sea salt and freshly ground black pepper, to taste
Rinse and dry the lettuce. Slice lengthways, removing any coarse outside leaves. Peel and thinly slice the pear lengthways, discarding the seeds and core.
Heat the olive oil and sugar in a small heavy pan, stirring, until syrupy. Add the sliced pear and cook until glazed.
Place the lettuce on 2 large plates or in wide shallow bowls. Spoon over the dressing and add the ham and glazed pear.
To make the dressing, crumble the cheese, then mix with the vinegar. Slowly add the olive oil and season to taste.
