Ingredients

  • 2 cups ground raw almonds
  • 1 cup raw pecan nuts
  • 5 T coconut oil
  • 1 T pure almond butter
  • 1 cup medjool dates
  • 1 1/2 cups raw cashew nuts
  • 1 banana
  • 2 cups raspberries
  • 1 T pomegranate
  • 1 vanilla pod
  • 4 T pure maple syrup

Cooking Instructions

1 Place the ground almonds and pecan nuts in a food processor and blend until fine
2 Add 2 1/2 T coconut oil, dates, almond butter and chia seeds. Blend for about 4 minutes
3 Mould the dough into a greased pie dish
4 Bake at 180 °C for 20-25 minutes until brown on top
5 While the base bakes, blend the raspberries, banana, pomegranates, cashews, maple syrup and 2 1/2 T coconut oil for 5 minutes or until thick and creamy
6 Once brown, remove base from the oven and allow to cool
7 Once the base has cooled, pour mixture onto the base and decorate with raspberries
