Ingredients

  • 1 cup Woolworths quick-cook oats
  • 1 ripe banana
  • 1 cup baby spinach
  • 1/2 cup milk
  • 1 free-range egg
  • 2 T coconut or olive oil
  • 1 t ground cinnamon
  • 1 t baking powder
  • a pinch salt

Cooking Instructions

1. Process the oats in a blender until a fine powder has formed. Add the remaining flapjack ingredients and blend until smooth.

2. Fry spoonfuls of the batter in a nonstick pan over a medium heat. Allow to cool slightly. Decorate with your choice of toppings and serve.

Cook's note: This is a great recipe to get your kids to eat green veggies.
