“These beans are so satisfying on their own, but you could serve your favourite protein on the side.” – Bianca Strydom

Ingredients

  • 800 g can whole peeled tomatoes
  • 2 x 70 g cans Woolworths soffritto tomato paste
  • 2 T Worcestershire sauce
  • 1 T red wine vinegar
  • 1 T Muscovado sugar
  • 4 Woolworths sundried tomato quarters
  • 1 T fish sauce
  • 2 T olive oil
  • sea salt and freshly ground black pepper, to taste
  • 2 x 400 g cans butter beans, drained
  • 150 g Woolworths Gorgonzola
  • Woolworths onion sprinkle, for serving

Cooking Instructions

1. Preheat the oven to 180°C. Combine the tomatoes, soffritto paste, Worcestershire sauce, vinegar, sugar, sundried tomatoes, fish sauce, olive oil and seasoning, and blend until smooth.

2 Toss the beans through the sauce, then pour into a baking tray and bake for 15 minutes. Top with the Gorgonzola, then bake for a further 15 minutes, or until golden and melted. To serve, top with the onion sprinkle and season with black pepper.

Cook's note: Serve with Woolies’ pork-and-herb bangers, your favourite frikkadels garnished with fresh parsley, or plant-based Beyond Meatballs.
