Chilli oil is the easy home-made condiment you need to have in your fridge at all times. It transforms instant noodles, is delicious drizzled over eggs, pizza, or just about any savoury dish.

Ingredients

Method
  • 1 cup canola oil
  • 3–4 cloves garlic, thinly sliced
  • 1 x 5 cm piece fresh ginger, chopped
  • 1 - 2 T smoked chilli flakes, or to taste
  • 1 t Szechuan pepper
  • 1 T Woolworths onion flakes
  • 2 - 3 star anise
  • 2 t light brown sugar
  • 1 1 sea salt
  • 200 g Woolworths ramen noodles, cooked, for serving
  • 2 spring onions, chopped, for serving

1. Heat the oil in a pan until shimmering and almost smoking hot. Place the ginger and garlic in a bowl with the remaining ingredients. Add more sugar or salt to your preference.

2. Carefully pour the hot oil over the ingredients and allow it to bubble and cool completely. The longer you allow the oil to stand, the more flavour develops. Store in a sterilised jar.

3. Serve generously drizzled over Woolworths hot ramen noodles with chopped spring onions.
