Ingredients

  • 300 g fresh berries (strawberries, raspberries, blueberries)
  • ½ cup cranberry or apple juice
  • 150 g sugar
  • 3 T butter
  • 2 free-range eggs
  • 1 t cornflour
  • A pinch of sea salt

Cooking Instructions

In a food processor, liquidise all the ingredients until smooth. Pour into a double boiler and stir continuously over heat until the mixture has thickened and is silky in texture.
Strain through a fine sieve (optional) and pour into a small sterilised glass jar. Seal and allow to cool. Tie with a silk ribbon and present as a gift with a selection of palmiers and other biscuits.
