Ingredients

Method
  • 1 x 150 g wheel Wensleydale cranberry cheese
  • 2 ripe pears
  • 1/3 cup honey

Using a sharp knife, slice the cheese horizontally into three rounds. Using a vegetable peeler, create paper-thin shavings of pear and squeeze over the lemon juice. Layer the cheese with pear shavings, drizzle with the honey and serve immediately.

Cook’s note: Add texture to this visually appealing dish by sprinkling over chopped roasted nuts.
While we’ve used juicy pears in this very beautiful (not to mention, delicious) cheese course, you could substitute them with apples or any fresh seasonal fruit.
