Hot avocado-and-chicken stock smoothie with fresh lime

Ingredients

Method
  • 4 cups chicken stock
  • 2 ripe avocados, skinned and chopped
  • Juice of 2 fresh limes
  • Sea salt and milled pepper, to taste
  • Lime halves, to serve

Heat the chicken stock. Once it’s very hot, stir in the chopped avocado and strained lime juice, and quickly blend.
Check seasoning. Serve immediately with lime halves for squeezing.

Cook’s tip: Avocado is the only fruit that has monosaturated fat. Mashed into stock and spiked with a squeeze of lime, it’s a quick and healthy treat.
