We've taken the viral crinkle cake recipe to new heights by adding caramelised and spiced JOYA® apples. Don't fret! While it may look like it takes a lot of effort, it's actually pretty easy to achieve. JOYA® apples are perfect for baking, they retain their crunch while their iconic sweet, and tangy flavour is intensified when caramelised.

Ingredients

  • 375 g frozen phyllo pastry
  • 175 g unsalted butter 
  • 4 JOYA® apples, cubed
  • 2 T brown sugar 
  • 1 t ground cinnamon, plus extra for dusting 
  • 125 g pecan nuts 
  • 500 ml Woolworths fresh custard
  • icing sugar, for dusting 

Cooking Instructions


1. Preheat the oven to 180°C.

2. Grease a 30cm round cake tin with non-stick cooking spray.

3. Lay one sheet of pastry onto a clean work surface, with the long side facing you. Melt 150g butter and brush onto the pastry. Lay another sheet of phyllo pastry over the first sheet and repeat the process until you have enough pieces to fill the cake tin, about 6–8 sheets.

4. Using your fingers, roughly shape the pastry into a fan by folding one side up and the other side down. Do this with all the sheets of pastry. Arrange in the cake tin, leaving no gaps.

5. Drizzle the remaining melted butter over the pastry. Bake for 20 minutes, then allow to cool.

6. While the pasty is baking, place the remaining unmelted butter and the apples in a saucepan over a medium heat, stirring until the butter melts. Add the sugar and cinnamon and mix until combined, then reduce the heat to low, cover with a lid and cook for 10 minutes.  Turn off the heat and add the pecan nuts.

7. Pour the custard over the pastry, making sure to get into the gaps.

8. Spoon the apple mixture into the cake from the centre moving toward the edges, ensuring the top is completely covered with apples.

9. Place the dish on a baking tray and bake for 30 minutes, or until the pastry is golden and the custard has set. Allow to cool for 10 minutes.

10. Remove from the cake tin, and dust with icing sugar and cinnamon.
