  • 1 cup Woolworths Green Kale
  • 1 cup cup Woolworths Mature White Cheddar, grated
  • 1 T Woolworths Salad Cream/Or Mayonnaise
  • 1 Large Brown Onion
  • 2 cups Flour
  • 2 t Baking Powder
  • 1 t Bicarbonate of Soda
  •  ¼ t Nutmeg Powder
  •  ¼ t Garlic Powder
  • 1 t Sea Salt
  • A pinch black pepper
  • 1 Milk
  •  ¼ cup Olive Oil
  •  ¼ cup butter, melted
  • 2 large eggs

Cooking Instructions

Wash and rinse Kale thoroughly, and finely chop.
Roughly Grate mature white cheddar.
Finely chop the onion.
Sieve flour and mix the rest of the dry ingredients including, baking powder, bicarbonate of soda, nutmeg powder, garlic powder, black pepper and salt together.
Now add the chopped kale and onion into the dry ingredients mix, and mix well.
In a separate bowl, beat the eggs, milk, mayonnaise, melted butter, and oil together.
Now slowly add the above dry ingredients mixture, into the wet ingredients mixture. Fold gently until all ingredients are well incorporated into a thick batter. Lastly gently fold in the grated cheese.

Preheat oven and bake at 190 degrees celsius for approximately 20-25 minutes.

Delicious served warm with cream cheese, softened butter, or sweet chilli jam.

Yields approximately 12-16 medium sized-muffins.
