Kebabs with tomato salad and roasted garlic and peanut dressing

  • 4 heads garlic
  • 1 red chilli
  • 1 lime, peeled
  • 2 T olive oil
  • 3 x 650 g kebabs (see cook\'s note)
  • 400 g mixed tomatoes
  • For the roasted peanut dressing, mix:
  • 2 cloves garlic, grated
  • 1 T ginger, grated
  • 2 chillies, finely chopped
  • 2 lemons, juiced
  • 2 limes, juice
  • 1/2 cup olive oil
  • 100 g peanuts, roasted and roughly chopped
  • Sea salt, to taste

Cooking Instructions

Wrap the garlic heads, chilli and lime peel in foil and drizzle with olive oil. Place the parcel over hot coals and roast for 15 to 20 minutes, or until the garlic is soft and golden.

Grill the *kebabs until done to your liking.

Scatter the tomatoes on a serving platter, drizzle with the peanut dressing and serve with the roast garlic and grilled kebabs.
