Ingredients

  • 1 cup all-purpose flour / cake flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon fine black pepper
  • 1 1/2 tablespoons sugar (white / brown / substitute)
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup vegetable oil (or other)
  • 1/2 cup Melrose (or other brand) cheese spread in 250 g jar
  • 1/2 packet bacon, bits, cooked
  • 1 teaspoon paprika (optional)

Cooking Instructions

Preheat oven to 190 oC.
In a large mixing bowl, stir together the flour, baking powder, black pepper, paprika, cooked bacon bits, salt and sugar. Make a well in the center. In a small bowl beat egg, Melrose cheese spread, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat.
Pour the batter into greased or lined12 muffin pan and bake for 15 minutes or until golden. Let muffins rest in pan for about 5 minutes, carefully remove to a wire rack. Slice in half and spread with rest of Melrose cheese spread or butter. Makes 12 muffins. Best eaten just after baking.
