  • 1 x 700g pack Woolworths crumbed free-range chicken schnitzels
  • 125g sour cream
  • 1 red onion, finely diced
  • 200 g cocktail tomatoes, sliced
  • 10 g fresh coriander, chopped
  • 1 lime or lemon, juiced
  • sea salt and freshly ground black pepper

Cooking Instructions

1. Preheat the oven to 180°C. Bake the schnitzels on a tray for 20 – 25 minutes, until golden and crunchy. Top with 1 -2 T sour cream (you can also use crème fraîche or guacamole).

2. Sprinkle over the red onion and tomatoes. Garnish with coriander and squeeze over the lime or lemon.

Cook's note: Ese a spoonful of Woolworths tomato salsa instead of fresh tomato.

    Nice refreshing quick & easy supper – would have this again but summer time
