Mushroom risotto oven-baked

Ingredients
- 200 grams exotic mushroom mix / brown mushrooms cubed
- 4 tbsp butter
- 2 tsp garlic, chopped
- 1/2 onion, chopped finely
- 1 cup raw risotto rice
- 4 tsp stock granules (veg / chicken / beef)
- 2 cups boiling water
- few tsp truffle oil
- Parmesan cheese, grated (powder)
- black pepper
Cooking Instructions
Preheat oven to 200 oC. Use an oven dish with a lid. Place butter, onion, garlic, rice, stock, 100 grams of the mushrooms and black pepper in the dish and stir to combine. Put the lid on and bake for 30 minutes. Remove dish from the oven, stir, add the remaining 100 grams mushrooms, cover again and bake for another 20 minutes.
Drizzle truffle oil on top and sprinkle Parmesan cheese over.
