Ingredients

  • 16 prawns
  • 2 T olive oil
  • 2 Sundowner® apples
  • spring onion curls, to garnish
  • 1 T grated ginger
  • 1/2 t chopped chilli
  • 3 T rice wine vinegar
  • 2 t brown sugar
  • 8 wonton wrappers

Cooking Instructions

Butterfly and devein the prawns before tossing in olive oil and frying in a hot pan for 2 minutes on each side.

Serve hot, stacked between sliced Sundowner® apples, crispy baked wonton wrapper sheets (available from Chinese shops) and spring onion curls (see below).

Combine grated ginger and chopped chilli with the rice wine vinegar and brown sugar and drizzle over just before serving.

To make spring onion curls, slice the spring onions lengthways and drop them  in a bowl of ice cold water until they curl, between 10 and 15 minutes.
