Parusha Naidoo’s “gut-healing” guacamole

Ingredients

Method
  • 1 avocado, peeled and stoned
  • 1 garlic clove, minced
  • ½ t turmeric
  • ¼ cup apple cider vinegar
  • 50 g coriander, chopped
  • 50 g mint, chopped
  • Olive oil, a splash
  • 1 t paprika

Mash the avocado with the garlic, turmeric and apple cider vinegar. Add the coriander and mint, then add the olive oil and mix well. Sprinkle over the paprika to serve.

Cook's note: “Apple cider vinegar is a prebiotic and aids the production of probiotics that promote a healthy gut. Turmeric can reportedly help to reduce inflammation, mint promotes digestion, coriander has antibacterial properties that promote digestive enzyme production, and paprika promotes the production of saliva and gastric acid, which stimulates digestion.” – Parusha Naidoo
