Ingredients

  • sheets of rice paper
  • Water
  • 1 carrot
  • ½ cucumber
  • Basil leaf
  • Steamed prawns
  • Soya sauce

Cooking Instructions

Soak sheets of rice paper in cool water until softened. Cut carrot and cucumber into thin matchsticks. Remove the rice-paper sheets from the water and shake off excess water.
Transfer to a board and place a basil leaf in the centre, top with a few sliced, steamed prawns and scatter over the carrot and cucumber sticks.
Fold the edges of the rice paper over the filling to create square parcels. Repeat with the remaining sheets and serve with soya sauce.
