Ingredients

Method
  • 2 tomatoes, sliced
  • 1 avocado, sliced
  • 1 handful coriander, roughly chopped
  • 1/2 red onion, finely sliced
  • 1 red chilli, finely sliced
  • Lemon juice
  • 2 x 200 g salmon fillets
  • 2 T olive oil

Slice the tomatoes and avocado into cubes. Wash and roughly chop the coriander. Finely slice the red onion and fresh red chilli. Mix to make a salsa. Season and add a squeeze of lemon juice.

Rub the salmon fillets with olive oil and sear in a hot pan for 2 to 3 minutes on each side.

Plate and spoon over the salsa.
