- 1 kg rack of lamb
- 2 tablespoons crushed coriander seeds
- Olive oil
- Maldon salt
- Freshly ground black pepper
- 3-4 granadillas, halved
Preheat the oven to 180°C.
Rub the top of the rack of lamb with crushed coriander seeds, salt and pepper and roast for 30 minutes.
Turn the oven off and leave to rest for 10 minutes.
Drizzle with lemon juice and serve warm with fresh granadillas.
