- 2 cups radishes, raw, rinsed, topped & tailed
- 1 onion, chopped fine
- 2 tablespoons parsley leaves, chopped fine
- 2 hard-boiled eggs, chopped fine
- mayonnaise (any kind)
- 1 tablespoon chilli flakes (optional)
- salt & pepper to taste
Halve the radishes.
Mix the halved radishes, onion, parsley and mayonnaise to generously coat the mixture. Season to taste. Add the eggs. Refrigerate.
